For processes to stay in place (that should stay in place) they need to be current, and well-documented. Not in terms of pages, but in terms of the key steps necessary for the processes to be executed well. The best processes are only 1 page, but with checklists that can be very detailed. Give the new consultant your expectations on what is required for the company to be profitable and what the processes need to deliver, and then give the person the flexibility in delivering them (but with the requirement that the processes must stay simple).
